spring rolls
yesterday, I had a pretty productive day..
'went to the gym, went grocery, and came home and made dinner
for me and my bf.

I was craving the Vietnamese Spring Rolls that my friend made
for us on Thursday night, so I decided to try my hand at them.
Fortunately, you can't really mess up spring rolls, even if you tried.
The only challenge I had was in rolling the darn things.

I also tried a recipe for Vietnamese salad, since I was
craving vegetables. Unfortunately, it was too citrus-y...
very maasim (sour). I think i need to add more sugar to the recipe.
Neverthless, it was a pretty healthy meal and I was happy to finally be
able to incorporate herbs into my meal (mint).

After dinner, my bf and I decided that we were no longer gonna
go to the b-day party we were supposed to go to.
We both still had a lot of work to get to: working on a photography project (for him)
and pumping out more cover letters and resumes (for me).

So we both worked for a couple of hours.
Then, we indulged on some of the Serendipity Frozen Hot Chocolate that
my cousin had given us for x-mas.
We also caught up on the Thursday night shows we taped: "Friends", "Scrubs"...the whole Must See TV line up.

Before going to bed, I decided to read one of the books I borrowed from the library.
It's a book on cover letters.
I figure I should freshen up on this subject before attempting to
write more.

'Gonna continue reading it this morning before we head out to
another baptism.
Then, I'll probably go to my cousin's to borrow her fax
machine so that i can send off one of my job applications.

It should be a pretty easy day today.
I'm really looking forward to seeing my friends at the baptism, though,
especially since we missed them last night.

Ok, off to reading land I go.....
